As they say, desperation is the mother of invention! When I was grocery shopping the other day, I was looking for one of my favorite oat snack bars, but the store was completely sold out! I figured I'd just have to wait until my next shopping trip next week. But then I realized, I could probably make a similar kind of bar at home without much trouble. And that's how these easy (and delicious) no-bake almond oat squares were born!

When it comes to my favorite commercial bar brand, oat and honey is my favorite flavor, but I would have been happy with other ones, too. Unfortunately, I had missed some sort of sale and everyone else had gotten every single box before I got there. I considered going to another store, but I don't like to waste gas on trips for just one thing. So on the drive back I started thinking about how I could use what I had to make a similar kind of bar.

The final no-bake almond oat squares aren't exactly like the brand I get at the store, but they're just as tasty and so much healthier! There's no refined sugar, they can be made gluten free if you use gluten-free oats, and I even included some healthy flaxseed.

Of course, I'm not the only one who eats the bars I'd been looking for in the store. They're one of my kids' favorites as well. While I appreciated my healthier no-bake version, I worried they wouldn't feel the same way.

I made a quick batch before heading out with the kids to the pool for some summer fun, then took them out of the freezer when we got back. I'd picked up some cute animal face plates when I was at the store, too, and served my no-bake almond oat squares on top of them, hoping the cute faces would distract the kids from the healthy treat. But I shouldn't have worried! They wolfed down their first bars and quickly asked for seconds. Since they're so healthy, I had no problem agreeing and joined them in the seconds as well!

So I guess you could say these no-bake squares are busy mom approved and picky kid tested! Here's how to make them for your own family!




No-Bake Almond Oat Squares

Makes twelve squares

Ingredients

2 cups oats
1/2 cup almond butter (I used a raw, unsalted, creamy variety, but other types would also be fine)
1/4 cup pure maple syrup
1/3 cup ground flaxseed
1/4 cup mini chocolate chips or raw cacao nibs (Using cacao nibs will make the bars have a bit of crunch but using chocolate chips will make them sweeter)
1 teaspoon vanilla extract
2 tablespoons shredded coconut (for topping; unsweetened is healthier, but sweetened has more flavor- I used sweetened)

1. In a large bowl combine oats, flaxseed and chocolate chips.

2. In a small bowl, mix together the syrup, almond butter and vanilla until smooth.

3. Pour the syrup mixture into the oats and mix well until all ingredients appear "wet".

4. Line an 8x8 pan with parchment paper and pour in the bar mixture. Use an additional piece of parchment paper and place it on top. With your hands, press the mixture down into the pan until it's even.
5. Remove the top parchment paper and sprinkle with coconut. Press the coconut down into the bars with a spatula.

6. Place the pan into the freezer for thirty minutes to set. Remove and cut into squares. Let thaw five minutes before eating.
