Parmesan Artichoke Pasta Salad

I love making pasta salads for family get-togethers. It is easy to get creative with them, as long as you have a good base of ingredients like fresh veggies, a good dressing and of course, the pasta! And they're perfect for hot summer days! Here's how to make a delicious Parmesan Artichoke Pasta Salad!

I made my Parmesan artichoke pasta salad gluten free by using gluten free pasta. I know some people prefer gluten free pasta that is a corn blend (they say it holds up better), but my favorite brand is actually just made out of brown rice and water. It holds up very well, and doesn't have any sort of odd texture. Of course if you're not avoiding gluten, feel free to use regular wheat pasta!

For this salad, you will need a few cups of fresh veggies. It is not a set thing that they be particular ones, I would just be sure you have carrots and tomatoes in there, as well as a good bell pepper. Otherwise, use what your family likes and just be sure it has a good balance of color and taste.



Parmesan Artichoke Pasta Salad

Ingredients

1 package pasta (I used spirals AKA fusilli)
1 package cherry tomatoes
1 can artichoke hearts
2 cups fresh veggies such as bell pepper, yellow squash, celery, carrots (I think shredded carrots are easier to eat in a pasta salad than baby ones)
1 to 1.5 cups fresh Parmesan cheese
Your favorite oil and vinegar dressing – or use the recipe that follows

Homemade Dressing Ingredients

1 cup oil of your choice (I chose extra virgin olive oil)
1/3 cup balsamic vinegar
Salt and pepper to taste
A pinch of herbs such as basil, oregano, and rosemary (fresh are better than dried if you have them!)

Directions

1. Put your water on to boil for the pasta. Wash and chop your veggies while it is coming to a boil.

2. Open your can of artichoke hearts and drain well. They tend to be soaked through with the juice, so you may need to press them to release some of that, otherwise when you chop them they will have juice running out all over your counter. Chop them to your liking and pull some of the pieces apart so they will spread nicely in the salad.

3. Your water should be boiling by now. Add your pasta to the water and follow the package directions. When its done, leave it in a colander so it can drain and cool until you need it.
4. Measure out your Parmesan cheese. You will add it into the salad in layers, so just have it ready.
5. Rinse your tomatoes and check for any bad ones. Chop in half if you like. I left mine whole since they weren’t too large.
6. If you are making your own dressing, this is the perfect time to do that while your pasta is finishing draining and cooling. In a glass measuring cup or bowl, use a whisk to combine the oil, balsamic vinegar, salt, pepper, and herbs.

7. Time to start assembling your pasta salad! Combine a layer of half the veggies and artichokes in a large serving bowl.

8. Add in 1/3 to 1/2 of your Parmesan cheese. Then add half of the pasta. Mix it up well to get all the ingredients spread out. Then whisk the dressing to redistribute the herbs, and drizzle some onto the pasta salad. Mix the salad to spread it evenly.
9. Add the rest of your veggies and artichokes to the bowl, then add the rest of the pasta. Add more Parmesan, but leave a little to garnish the salad at the end.
10. Add more dressing to the salad and mix to coat. You don't have to use all of the dressing, its okay to put the excess on the table so people can add more to their tastes.

11. Garnish the salad with the remaining Parmesan cheese. Then enjoy!
