Strawberry Banana Overnight Oats

Sometimes on a really crazy morning, I barely have time to put together some cereal! Which is why I'm such a huge fan of setting up breakfast the night before when possible. It just makes mornings so much easier, especially with kids! This recipe is easy to put together ahead of time, and is healthy! Here's how to make some delicious Strawberry Banana Overnight Oats!

While I used strawberries and bananas in my overnight oats, if you'd prefer different fruits, feel free to swap them out for your favorites! I imagine blueberries would make a nice substitute for the strawberries!

You can put your strawberry banana overnight oats in any container you like. But I find it easiest to eat them on the go when they're in a Mason jar instead of a bowl. It doesn't hurt that Mason jars are so pretty, too!



Strawberry Banana Overnight Oats

Ingredients

1 cup oats (regular not instant)
1.5 cups almond milk
3 tablespoons chia seeds
1 teaspoon vanilla extract
2 tablespoons pure maple syrup
6 strawberries, washed and sliced
1 banana, sliced
2 tablespoons almond butter
2 tablespoons raw cacao nibs

1. In a large bowl, combine the oats, almond milk, chia seeds, vanilla and syrup.

2. Mix well until everything is combined. Let sit overnight (or for at least four hours) in the fridge.

3. In the morning, chop the berries and bananas.

4. Portion the oatmeal mixture into bowls/jars.

5. Mix in the almond butter and top with the berries, banana and cacao. Serve cold and enjoy!

In a rush? Pre-portion everything the night before. Combine the first five ingredients and mix well. Portion into two mason jars and layer with almond butter, berries, banana and cacao. Let sit in the fridge overnight and grab your strawberry banana overnight oats on the way out the door!
