Shrimp Scampi Orzo

Serves 4

Ingredients

3 cups of orzo
3 tablespoons of olive oil
½ pound of large raw, deveined, shelled, tails off shrimp
2 medium shallots, finely diced
4-5 cloves of garlic, minced
Salt and pepper to taste
5 tablespoons of unsalted butter
Juice of 1 large lemon
1 cup of white wine
3 tablespoons of parsley, roughly chopped
2 tablespoons of grated Parmesan cheese
Crushed red pepper flakes to taste (optional)


Directions

1. Cook the orzo per the package directions. Set aside.
