Ramen Vegetable Stir Fry


Ramen noodles have an unfairly bad reputation. People see them as the unhealthy quick meal made by college students and people who don’t know how to cook. But actually, ramen noodles are like any other noodle and can be used to make delicious, healthy meals! If you need a fast lunch or dinner, pull out the ramen and make this Ramen Vegetable Stir Fry!

Ramen noodles actually aren’t unhealthy by default. It’s the seasoning packet that usually makes ramen unhealthy, so by leaving that out this dish actually becomes pretty nutritious! You can even find gluten-free organic ramen noodles if you want a super healthy dish!

This is one of my go-to favorites for a quick homemade lunch for my kids on the weekend. It keeps them full until dinner, and it saves me money because we don’t have to get something out.

If you have a big family to feed, or just a hungry teenager, feel free to add another 1 or 2 ramen packets and more eggs. Also feel free to add in any leftover cooked chicken you might have!




Ramen Vegetable Stir Fry

Ingredients

2 packages of ramen noodles, discard the seasoning packets
1 cup frozen peas and carrots
4 green onions, diced
2 eggs
Soy sauce, tamari sauceliquid aminos, or coconut aminos to taste
Sesame oil or canola oil
Salt and pepper to taste

Directions

1. Cook the 2 packages of ramen noodles according to package directions. Once the ramen noodles are cooked, drain and rinse with cool water and set aside.

2. Pour a little cooking oil into a large pan and sauté the frozen peas and carrots and green onions until tender, about 10 minutes.
3. In a separate pan, scramble the 2 eggs.

4. Add the scrambled eggs and ramen noodles into the large saucepan.
5. Add soy sauce to taste and continue to heat through for another 5-6 minutes. If you used low sodium soy sauce you may also want to add in a bit of salt and pepper.

    1. I have used the noodles from these packages too. Like you, I always throw out the seasoning pack.
