Frozen Yogurt Banana Pops

I'm a big fan of ice cream and frozen yogurt on hot summer days. But I have to admit, a lot of their flavor often comes from added refined sugars. So when I'm trying to be healthy, but also want a yummy, cold treat, I have to get inventive! That's how I came up with these no-added sugar Frozen Yogurt Banana Pops!

These frozen yogurt banana pops are fun to make, and fun to eat! My kids enjoyed helping me coat the bananas, and were happy these treats didn't have to freeze as long as some other no-bake desserts do.

I enjoyed making these not only because they turned out delicious, but also because I was able to use up some bananas that were getting older! So if you're looking for a tasty way to use up old bananas, this is definitely a recipe to try! Of course, you can't use bananas that are so old that they're essentially mush, because those won't hold up enough to be coated. But old bananas that still have some firmness left will work just fine!

I made my banana pops with stevia so as to avoid refined sugars. But if you're not a stevia fan, feel free to use other sweeteners! If you want to use regular white sugar, probably 1/2 - 1 teaspoon would equal the stevia I used. But feel free to mix up the coating, taste it, then possibly add more sweetener before coating your bananas. Remember, you can always add sugar, but you can't take it away!




Frozen Yogurt Banana Pops


Ingredients:

3/4 cups plain Greek yogurt
1 teaspoon vanilla extract
1 drop liquid stevia (or preferred sweetener)
2 bananas, cut into half inch slices
2 tablespoons shredded coconut (optional- pick the topping of your choice)
1.5 tablespoons finely chopped walnuts (optional)
2 tablespoons mini chocolate chips (optional)

Directions:

1. In a bowl, combine yogurt, vanilla and stevia and mix to combine.
2. Line a cutting board or baking sheet with parchment paper.

3. Working in batches, place the banana slices into the yogurt mixture and carefully coat the bananas. Use a spoon and be careful not to break the bananas. Be generous with the mixture.

4. Place the yogurt covered banana onto the parchment paper.

5. Once all the bananas are covered, top each banana bite with either chocolate chips, walnuts, coconut or any topping of your choice. Lightly press the topping into the banana bite with a spatula.
6. Place the cutting board into the freezer for one hour to set.

7. To eat, remove the frozen yogurt banana pops from the freezer and let sit at room temperature for five to seven minutes. Then enjoy!
