Blueberry Maple Tarts

I don't know exactly how many blueberries I've eaten this summer, but I can tell you that it's been a lot! That's because they're so good right now! But there's only just so many blueberries I can eat plain. After a while, I start wanting to mix their flavor with something else. That's what led me to create these tasty Blueberry Maple Tarts! They're easy to put together, refined sugar free, and gluten free!

It's always nice when you can have a tasty dessert that's also healthy. These blueberry maple tarts are made with bueberries (an antioxidant rich superfood), no refined sugar, contain healthy chia seeds, and are made without gluten. On top of that, they taste absolutely delicious! Even my kids couldn't find anything wrong with these (and they're not usually fans of gluten free foods). Bake up a couple and try them for yourself!

Blueberry Maple Tarts

Makes six tarts.

Ingredients:

Blueberry Jam:
1.5 cups blueberries
3 tablespoons pure maple syrup
1 tablespoon chia seeds

Crust:
2 cups almond meal
2 tablespoons coconut oil (measured solid)
1 teaspoon cinnamon
1 egg
1.5 tablespoons chopped almonds for topping

Muffin tin inserts/cupcake liners

Directions:

1. In a pot combine the blueberries and syrup and heat over medium high. Once it begins to boil/simmer, use a potato masher to mash the blueberries, leaving some intact for texture.
2. Add in the chia seeds and stir to combine.
3. Reduce heat to medium low and let simmer for 8-10 minutes or until desired texture.
4. Taste your blueberry jam. If you prefer a sweeter taste, stir in more syrup.

Make the crust:

1.Preheat the oven to 350 degrees.

2. In a large bowl combine all crust ingredients (except chopped almonds). Mix until it sticks together.

3. Line a muffin tin with inserts and divide the almond mixture evenly into six tins. It will look like more than you need but you want the crust to be thick so it doesn't fall apart.
4. Using your fingers, spread the mixture over the muffin tins, pressing hard so it holds together.

5. Bake in the oven for 8 minutes. The coconut oil will be bubbling on top. Let them cool and firm up for ten minutes, but don't turn off the oven just yet.

1. Evenly distribute the blueberry mixture into the muffin tins.

2. Top with chopped almonds. Bake for three more minutes to combine flavors.
3. Remove and let cool before enjoying!

My family started a new tradition a few months ago- every Friday night is homemade pizza night! Within a few weeks we got tired of having pizza the usual way, and started looking for recipes that were more pizza-inspired than actually pizza. We've been having so much fun trying out different pizza-type dishes (mini pizzas, calzones, etc.), that I decided to put together a collection of some of the ones I've already tried, or want to try next! I make my own dough for our dough-based homemade pizza creations. It's actually really easy if I make the dough the day before in my bread machine. One batch of dough is enough for two large pizzas, which is plenty for my family. Sometimes I'll do two batches in a day and freeze the extra one, so I can have an even easier time the following week! But if you're pressed for time, there's nothing wrong with using some refrigerated pizza dough.

Of course, making your own pizza (or pizza-type creations) can never be as fast and easy as ordering pizza out, but it's quick enough to fit into the busy Friday schedule I think most of us moms have (especially if you make your dough ahead of time)! If your kids are old enough to help, they can speed up the process by rolling out the dough, sprinkling on the toppings/cheese, etc.

Also, this is just a little tip: you don't need to make an extra trip to the store to buy pizza sauce to make pizza (or pizza-inspired foods). Pizza sauce is virtually the same thing as tomato sauce/pasta sauce. The differences are so small that unless you're a pizza connoisseur, you won't ever notice the difference if you interchange different types of tomato sauces.

Zucchini Taco Rolls

The versatility of zucchini is pretty surprising! I used to think it was just something you'd chop up for roasted veggies. When I was feeling adventurous, I'd trying stuffing a few zucchini. But that was as far as I'd take it. But nowadays, there are tons of other, fun ways to use zucchini, like making zoodles. Another clever way to use zucchini is to make these tasty Zucchini Taco Rolls!

I put chicken in my zucchini taco rolls because I needed a quick dinner, and nothing makes dinner faster than store-bought rotisserie chicken! But you also could use ground beef. Or skip the meat altogether and just add more black beans to make this dish vegetarian.






Zucchini Taco Rolls


Makes 16 zucchini taco rolls.

Ingredients

Zucchini Taco Rolls- If you need a quick lunch or dinner, you couldn't go wrong with these fast (and delicious!) zucchini taco rolls! They're so easy to make! | Mexican food, healthy, chicken, beans, easy recipes for busy moms, ways to use up zucchini

1 large zucchini, sliced lengthwise
2 cups of cooked shredded chicken (I used rotisserie chicken)
3 tablespoons of black beans, drained
3 tablespoons of corn kernels
1 teaspoons of taco seasoning
Salt and pepper to taste
1 cup of salsa
1 cup of shredded cheddar cheese
Cilantro or parsley to garnish
Sour cream (optional)

Directions

1. Preheat oven to 400 degrees.
2.Add zucchini to a sheet pan and bake for 5-10 minutes, then remove from oven. Allow zucchini to cool slightly, then gently remove excess water with a paper towel (this is very important!). Put zucchini in a plate to the side.

3. In a bowl, add chicken, beans, corn, taco seasoning, salt, and pepper. Set aside.
4. Add salsa to the bottom of a baking pan.

5. Lay out the zucchini slices to fill. Add one tablespoon of chicken mixture to a slice of zucchini. Repeat for all the slices.

Tangy Chickpea Salad

I've really become a fan of chickpeas (AKA garbanzo beans) lately! Of course, I like beans in general, so that shouldn't be much of a surprise. But chickpeas just have a great texture, and can be used to make some quick, filling dishes! I needed something simple to bring as a side to a BBQ last weekend. I considered a couple different options, but when I came across a can of chickpeas in my pantry, I knew exactly what I wanted to do! Here's how I made this Tangy Chickpea Salad!

I made this chickpea salad the day before I needed to take it to the BBQ. It tasted good when I taste tested it right after making it, but by the next day it was even better! So you totally could serve it right away if you're in a rush, but if you have the time, let it sit. Like fine wines, salads like this get better with time!

If you're not making this tangy chickpea salad for a group, you may want to halve the recipe. Or you can just keep the excess in the fridge for a few days as your family eats their way through it. Nothing wrong with having a homemade prepared side ready in the fridge!



Tangy Chickpea Salad

Makes 8 cups.

Ingredients

1 can chickpeas (28 oz)
1 can black eyed peas (19oz)
1 orange bell pepper, diced
2 stalks celery, chopped
1 cup green beans, cut into 1 inch long pieces
1 small red onion, diced (roughly 1/2 cup)

Dressing

1 clove garlic, minced
1/4 cup apple cider vinegar
3 tablespoons olive oil
1/2 lemon, juiced (about 1 Tablespoon juice)
2 tablespoons honey

Directions

1. In a large bowl, mix together the chickpeas and black eyed peas.

4. Pour the dressing over the chickpea salad and mix to combine.

What I really love most about ramen is how quick it is! Of course, some of the following recipes will only be super quick if you have some already cooked chicken or beef on hand.
